i think it's because it has a simple digestive system, thier food do not gothrough a series of complex breakdowns like humans it just basically passes it out, so the food would most likely look similar to it's original colour since it was not alterd alot in digestion.

the snail's digestive system consists of five regions: the intake region (mouth and buccal cavity with radula and jaws), the pre-digestion region (oesophagus with salivary glands, lateral pouchs and crop), digestion region (three chambered stomach with the associated digestive gland), uptake region (intestine) and the excretion region (rectum and anus).

Since you said please help, I will try to answer this question. A snail does not have the same kind of digestive tract as a more highly evolved species of animal. Therefore by nature, a snail being a more primative animal will lack certain enzymes which break down its food matter for absorbtion to provide fuel for its other living cells. This means that the animal can only extract some nutrients from its food source resulting in a partial digestion. therefore the feces from a snail may appear similar to the original food source both in texture and in color.
